Eomuk-bokkeum is fish cake sheets sliced into ribbons, stir-fried with onion, carrot, soy, sugar, and sometimes gochujang, until lightly glazed. It should be tender-chewy with a faint sheen, not wet or saucy — glaze is a coating, not a puddle.

Buy flat sheet eomuk, not ball- or sausage-style. Flat sheets sliced 1 cm wide fry evenly and absorb sauce without bursting; ball eomuk wants a brothy skewer, not a dry stir. Check ingredients if strict: some contain wheat for binding.

Technique: oil, onion 60 seconds, carrot 30, eomuk 90 seconds, then season (1.5 Tbsp soy, 1 tsp sugar) off-center so sugar caramelizes against the pan before coating. Garishly sauced eomuk-bokkeum is covering cheap eomuk; glazed not flooded signals better stock.

Variations are clean: mild soy-mirin for kids, gochujang-spicy for adults (add 1 Tbsp gochujang), or perilla leaf tossed at the end for perfume. All keep 4–5 days refrigerated; stir-fried then cooled promptly keeps better than covered hot.

Serve as cold or room-temp side: pack eomuk-bokkeum as the reliable third dosirak item alongside rice and main — it never streams like kimchi and never softens like spinach, which is exactly why moms trust it.
